Rice is a traditional food in Mexican cuisine. It is prepared in innumerable ways. The following is the basic recipe for white rice.
Ingredients: for 2 people
1 cup of rice
2 cups water
½ teaspoon salt
1 tablespoon butter or oil (optional)

It is not necessary to wash or strain the white rice beforehand. Some rices have more starch than others and there may be some undesirable rest.
There are many different types of rice, for most you can take the proportion of 1 cup of rice for every 2 cups of water.
Measure ½ cup of raw rice for each person. Depending on the rice, you will need more water or not. The package label can give you more specific instructions.
Bring the water to a boil. The rice expands when cooking as it absorbs water, so you should choose the pan of adequate size.
When the water boils, add rice, salt and butter if you use it. Cover the pan and lower the heat to a minimum so that it cooks evenly and does not burn.
It should not be uncovered during cooking as the steam escapes and this affects the cooking time.
The approximate cooking time for white rice is 18 to 25 minutes and for brown rice 30 to 40 minutes.
Check for a few minutes before cooking. The rice should be firm but tender and not crunchy. It can be sticky but not rubbery.
When you are ready, turn off the heat. If there is still water in the pan, tilt to drain the remaining water.
Cover the pan again and let it continue cooking on the steam for about 5 minutes more.
The rice is kept well in the refrigerator for several days so you can make more amount to have it ready for another dish.
